Fresh Ideas Food Service is developing a whole plant-based menu

Fresh Ideas Food Service Management recently launched an expanded new line of all-plant-based menu concepts known as the Mindful Fork, developed in consultation with the Humane Society of the United States (HSUS). The launch coincided with the company announcing that it has updated its target to now include what it says is an industry-first timeline that calls for 50% of its menu entries to be food-based. plants by July 1, 2025.

“This plant-based goal is historic, as it is the most ambitious of its kind by a foodservice management company,” the company’s announcement reads.

Mindful Fork is described as a chef-led initiative that includes innovative plant-based menu items spanning breakfast, lunch and dinner entrees as well as quick service options, allergen-free entrees and desserts .

“Plant-based is ultimately more than a trend, it’s a way of life that’s here to stay,” says chef Carl Lovett, vice president of cuisine. “That’s why Fresh Ideas created Mindful Fork and today announced our historic plant-based focus.”

To deliver on this commitment, Fresh Ideas is working with HSUS on creating tasty plant-based recipes, marketing concepts and promotions, as well as the first-ever virtual culinary trainings for its cohort of executive chefs and cooking professionals. .

To achieve its goal, Fresh Ideas says it will aim for annual menu goals to reach 10% Mindful Fork plant-based entrees by early 2023, 25% by early 2024, 45% by early 2025 and successfully achieve 50% Mindful Fork plant-based appetizers on menus by July 1, 2025.

In addition, it will extend culinary trainings to all of its operations to train culinary staff on Mindful Fork proprietary recipes and Mindful Fork marketing to ensure successful menu changeover and will report annually on progress towards achieving of its target of 50% in 2025.

The Mindful Fork menu includes dishes that can be incorporated into all Fresh Ideas food stations and many also lend themselves to being offered as pre-packaged take-out menu options which will be heavily emphasized given COVID dining restrictions and the flexible guest schedules, Lovett says.
